Vitamin D is a fat-soluble vitamin that belongs to the calciferols. The most important forms of vitamin D for the organism are vitamin D3, cholecalciferol, and vitamin D2, ergocalciferol.
Vitamin D has an enormous importance for the human body. One of its central roles is in bone metabolism: it is important in the smooth absorption of calcium and phosphorus in the intestine, in the incorporation of the minerals into the bones and thus bone mineralisation.
Vitamin D is also highly important in a multitude of other metabolic processes and regulatory processes in the control of genes. Vitamin D receptors have been found in almost all cells, which suggests its role as a hormone and confirms its regulatory effect. In order to act as an active vitamin D hormone, vitamin D must undergo various conversion steps.
Theoretically, 80-90% of vitamin D is formed in the skin cells by UV-B radiation from sunlight. Only about 10-20% is supplied through the diet. In our latitudes, vitamin D production through sunlight is sufficient to cover the daily requirement at most between March and October, and even then only if one spends time outdoors during the midday hours.
According to the RKI, hardly any vitamin D is taken in through the diet in Germany, as it is found almost exclusively in fatty fish such as mackerel and herring, as well as in edible mushrooms and eggs. Vegans can only take vitamin D2 from mushrooms. However, the low availability of vitamin D2 contained in mushrooms must first be converted into active vitamin D3 in the body, which is why very high amounts of mushrooms would be necessary.
